Chickpea Egg Scramble Recipe

Didn't you know? Chickpeas are life! Also known as garbanzo beans, we've been loving using chickpeas as a substitute for egg. It's a unique take that's one step ahead of a tofu scramble. So if tofu isn't your jam, try this recipe! 

INGREDIENTS

  • - 1 cup garbanzo flour
  • - 2 tbsp nutritional yeast
  • - 1/4 tsp black namak salt
  • - 1/4 tsp ground turmeric
  • - 1/2 tsp chili powder
  • - 1/4 tsp garlic powder
  • - 1 tsp baking powder
  • - 1 tbsp tamari
  • - 2 tbsp olive oil
  • - 8 oz pack Prime Roots bacon, small diced

 

INSTRUCTIONS


1. Over medium-high heat with 2 tbsp of refined coconut oil, sear bacon for 5-10 minutes. Set aside.

2. To prepare chickpea egg, whisk all ingredients together with 1 1/2 cups of water.

3. In a frying pan over medium heat, add 1-2 tbsp of olive oil. Pour half of chickpea batter into pan and let rise undisturbed for 1 minute. After it starts to thicken and bubble, stir gently to allow clusters to form for about 5-7 minutes - try not to stir too much (otherwise it will become a paste).

4. Serve bacon and chickpea egg with toast or roasted veggies of your choice!
