  • These Grilled Nectarine & Plant-Based Sriracha Bacon Skewers are an easy summer recipe that are refreshing and perfect for sharing. They're gluten-free, plant-based, and refined sugar-free. Made in just 10 minutes, this easy summer meal is a zesty way to kick off the summer.
  • Ingredients

  • - 8 yellow nectarines, sliced
  • - 1 8-oz pack of Prime Roots Plant-Based Sriracha Bacon
  • Marinade

  • - 1/2 tbsp agave
  • - 2 tbsp plant-based butter
  • - splash of champagne vinegar
  • - salt & pepper to taste
  • - 1 tbsp basil, chiffonade
  • For grilling:

  • - 10 bamboo skewers, pre-soaked in cold water for at least 30 minutes
  • - 1 tbsp of refined coconut oil or another high smoke point oil
  • Instructions

  1. In a small bowl, whisk together the following ingredients for the marinade: agave, plant-based butter, champagne vinegar, salt, and pepper.
  2. Add sliced nectarine to bamboo skewer, followed by a folded Plant-Based Sriracha Bacon strip. Repeat until skewer is full. Using a pastry brush, brush marinade over plant-based bacon and nectarine slices.
  3. Preheat grill over medium heat. Once fully heated, lightly grease with refined coconut oil or another high smoke point oil. Add skewers, turning every 3 minutes. Flip and repeat until lightly charred.
  4. Add freshly chopped basil. Serve immediately.
