Ingredients

  • 4 large portobello mushroom caps (stems and gills removed)
  • 1 tbsp olive oil
  • 1 tsp garlic
  • 1 tsp grill seasoning (or salt & pepper to taste)
  • 2 tbsp vegan mayo
  • 4–6 slices Prime Roots Koji Turkey
  • 1 avocado, sliced
  • A few leaves of butter lettuce or romaine

Instructions

  1. Prep the mushrooms: Gently wipe clean and remove the stems and gills with a spoon. Brush both sides with olive oil, then season with garlic and grill seasoning.
  2. Grill: Heat a grill pan or skillet over medium heat. Cook the mushrooms for about 4–5 minutes per side until tender.
  3. Assemble the sandwich: Use two mushroom caps per sandwich—one as the bottom “bun” and one as the top.
    Spread vegan mayo on the inside of each cap, layer on Prime Roots turkey, avocado slices, and lettuce.
  4. Finish & serve: Top with the second mushroom cap and secure with a skewer if needed. Serve warm!
